Pickled Fish

4 pounds of white fish, cut in 1" thick slices
4 teaspoons salt
3/4 cup oil, to fry the fish
1 cup white vinegar
1/2 teaspoon salt
30 grains of Badia's whole black pepper
3 Badia's whole bay leaves
4 garlic cloves, peeled
4 medium sized onions, sliced

Sauce:
2 cups Badia Extra Virgin Olive Oil

Wash and salt the fish. Cover and let stand 1/2 hour. In a 3-liter casserole dish, add the olive oil for the sauce, vinegar, salt, pepper, bay leaves and garlic cloves. Cook on low heat for 20 minutes. Add the onions and cook for 10 more minutes. Remove from heat and let cool completely. While the sauce is cooling, fry the fish in a frying pan over medium heat. Do not let it cook for too long, approximately 8 minutes on each side. Once the fish is fried and cooled, place in a deep serving dish with a lid. Pour the cooled sauce over it and cover. Let rest for 24 hours so that the fish absorbs the flavor of the sauce. Place in the refrigerator. Serve chilled.

Pescado en escabeche

4 libras de pescado blanco cortado en tajadas de 1 pulgado de grosor
4 cucharaditas de sal
3/4 de taza de aceite vegetal, para freir el pescado
1 taza de vinagre blanco
1/2 cucharadita de sal
30 granos de pimienta negra Badia
3 hojas de laurel Badia
4 dientes de ajo pelados
4 cebollas medianas en rodajas

Salsa:
2 tazas de Aceite de Oliva Extra Virgen Badia

Lave y sale el pescado. Cúbralo y déjelo reposar media hora. En una cacerola de 3 litros, agregue el aceite de oliva para la salsa, el vinagre, la sal, la pimienta, las hojas de laurel y los dientes de ajo. Cocine a fuego bajo por 20 minutos. Adicione la cebolla y cocine 10 minutos más. Retire del fuego y deje enfriar por completo. Mientras se enfría la salsa, fría el pescado en un sartén a fuego medio. No lo deje cocinar demasiado, aproximadamente unos 8 minutos de cada lado. Una vez que el pescado se haya freído y dejado enfriar, colóquelo en una fuente de servir honda con tapa. Vierta la salsa fría sobre el pescado y tápelo. Déjelo reposar por 24 horas para que el pescado absorba el sabor de la salsa. Póngalo en el refrigerador. Sírvalo bien frío.

Dan Marino Foundation presents at the Annual Family Café Conference
 


The 15th Annual Family Café Conference was held at the Hilton Orlando on June 7-9, 2013.

The Annual Family Café Conference is a statewide event designed to meet the informational and networking needs of individuals with disabilities or special health care needs and their families. Jordan Knab, Dean, and Susan Morantes, Admissions Director and External Liaison, presented at the Family Café on Marino Campus.

Miami Childrens Hospital Dan Marino Outpatient Center Celebrates 15 Years from 1998-2013

     

     

 

The Miami Children's Hospital (MCH) Dan Marino Outpatient Center celebrated 15 years of service at a fun-filled celebration on Friday, April 12. Patients and their families, guests and staff of the center were treated to guided tours of the facility, snacks, music and entertainment by stilt walkers.

The MCH Dan Marino Outpatient Center is a world renowned, integrated, neurodevelopmental center specializing in the evaluation and treatment of children with neurological conditions.  The outpatient center, developed as a partnership between the Dan Marino Foundation and Miami Children's Hospital in 1998, offers a comprehensive care program for autism and other developmental/cognitive disorders in children referred from all over the world.

Over the last 15 years, the MCH Dan Marino Outpatient Center has helped families in more ways than we ever imagined. Raising awareness and supporting children who are in need of specialized care is a passion that MCH and I both share,” said Dan Marino, Chairman of the Dan Marino Foundation.

"We are grateful for the continued support of Mr. Marino and The Dan Marino Foundation,” said Dr. Narendra M. Kini, President and CEO of Miami Children’s Hospital. “This collaboration along with a commitment to excellence has made the MCH Dan Marino Outpatient Center a regional and international care leader," he said.

The MCH Dan Marino Outpatient center also coordinates community outreach projects that include the services of specialized medical and allied healthcare professionals, educational organizations, volunteer programs and parent support organizations. The outpatient center offers a state-of-the art, fully equipped rehabilitation gym for occupational, physical, speech and language therapies as well as an on-site heated pool for aquatic therapy and swimming instruction.

Ground broken in March for the Marino Campus

We are very excited to announce the commencement of the renovations. On March 19, 2013, ground was broken, and the first sounds of saws and hammers were welcome music to our ears. Due to the construction on the site, we are unable to facilitate tours at this time, but we do anticipate opening the application process in early Summer and offering tours in the Fall. We will continue to keep you posted with emails on our progress and invite you to visit our new website, www.marinocampus.org which we will update regularly with exciting news and announcements. Thank you for your patience and continued support of Marino Campus – a first-of-its-kind opportunity for our young adults.
